A Tasty and Oh-So-Simple Salad

Meli-Melo tomatoes (Tesco) - add the colour
Chargrilled artichoke hearts (Waitrose) - add the 'meat'
Basil - a vibrant taste of summer

Basil oil
Balsamic vinegar
Salt & pepper


I had done my usual and gone down to do the vegetable garden at the village infant school during their lunchtime break and needed a quick, healthy lunch on my return as it was already getting towards mid-afternoon.

As I am also attempting to lose a little weight (ahem) ahead of my 50th birthday, I opened the vegetable door in the fridge to see if there was anything to inspire me. There were tomatoes. Rather a lot of tomatoes in fact. Some had been hiding at the bottom of the drawer and were only fit for the compost heap having turned rather soft (nothing WORSE than a soft tomato). But there was also the pack of Tesco's Finest (this is NOT a sponsored post!) Meli-Melo tomatoes which are a colourful collection of red and yellow cherry tomatoes. I had a luscious pot of basil by the sink but no mozzarella. No matter, I thought, it will be more healthy without the cheese! So I quite simply opened the packet, cut half of the tomatoes therein in half, and put in a bowl with a really good handful of large basil leaves and lashings of basil flavoured olive oil (something everyone should have in their summer larder) and balsamic vinegar. A twist of rock salt and black pepper completed the culinary pleasure. It was so simple, but so perfect - and filling too (so no need to pick at all those fattening snacky things). Result.
